Asparagus with cheezey quinoa

This is the last of my fresh local asparagus for the year, it comes and it goes so fast that you really need to overdose on it for a couple of weeks so you dont miss out!

This lunch is super easy, I used red and white quinoa because I didnt have enough of either alone.

1 c. quinoa
2 c. water
1/2 c. nutritional yeast
garlic, pepper, onion powder
2-3 Tblsp. coconut oil

Bring water and quinoa to a boil, turn the heat off on the stove and cover quinoa, it will finish cooking itself and you wont be wasting electricity/gas you dont have to waste.....
While the quinoa is cooking, chunk the asparagus, and bring to a boil or steam.

When your asparagus is finished cooking, toss the quinoa with spices, nut. yeast and coconut oil....plop it on a plate and garnish with sprigs of asparagus! Enjoy!
