Stuffed Mushrooms

This recipe is super easy and super delicious, so make some stuffed mushrooms already, would ya?

You will need:
package of button mushrooms
1/4 c. nutritional yeast (optional but totally delicious)
splash of olive oil
1 c. fresh spinach (dont have fresh, thats fine too)
2-3 cloves of garlic
daiya mozzarella cheese (optional)

Pull the stems out of the mushrooms, put them into a chopper and add all other ingredients (except daiya)....chop chop chop
Scoop this sloppy mixture into each stemless mushroom cap, should be a pretty decent sized hole in each one. Flatten the mixture as much as you can then if you decide to use Daiya cheese, sprinkle some on top.

Place the stuffed mushrooms on an oven save tray or dish with a very small amount of water in the bottom so the shrooms dont stick! Put in the toaster oven (or real oven, if thats how you roll) on 350 degrees for 15-20 minutes or until cheese is melted and they look ready to devour!

My daughter has the hugest weakness for mushrooms! I'll have to give her the recipe to make them! :-) They look great, thanks for sharing!
