These cookies are delicious, nutritious and a great pre/post derby snack! They deliver a protein punch AND satisfy a sweets craving!
2 cups. organic raw cashews (soak them for 4 hours then drain)
4 cups dried shredded unsweetened coconut
24-28 dates, pitted
8-12 Tblsp Agave Nectar (if you use it, I dont) or Organic Maple Syrup or Yucon Syrup (i prefer yucon but do use maple syrup if i dont have yucon, maple syrup will trump the rawness of the cookie tho!)
Blend your cashews, 3 cups of your coconut, dates and whatever syrupy liquid goodness....After you blend that up all nice, roll the cookie dough into balls (I use a melon baller) and roll in the remaining coconut. I then put them on parchment paper or just in a freezer safe flat pan and put in the freezer so they set......put them all in glass jars to keep them in the freezer (ball jars)...then when I need a quick protein punch I grab one and YUM!
You can also add more protein and vary this recipe by adding:
- hemp seeds
- goji berries
- chia seeds
- flax seeds
- raw cocoa nibs
