HOLY MACARONI Raw Vegan Macaroon Cookies!

                         These cookies are delicious, nutritious and a great pre/post derby snack!  They deliver a protein punch AND satisfy a sweets craving!
2 cups. organic raw cashews (soak them for 4 hours then drain)
4 cups dried shredded unsweetened coconut
24-28 dates, pitted
8-12 Tblsp Agave Nectar (if you use it, I dont) or Organic Maple Syrup or Yucon Syrup   (i prefer yucon but do use maple syrup if i dont have yucon, maple syrup will trump the rawness of the cookie tho!)

Blend your cashews, 3 cups of your coconut, dates and whatever syrupy liquid goodness....After you blend that up all nice, roll the cookie dough into balls (I use a melon baller) and roll in the remaining coconut.  I then put them on parchment paper or just in a freezer safe flat pan and put in the freezer so they set......put them all in glass jars to keep them in the freezer (ball jars)...then when I need a quick protein punch I grab one and YUM!

You can also add more protein and vary this recipe by adding:
  • hemp seeds
  • goji berries
  • chia seeds
  • flax seeds
  • spirulina
  • raisins
  • raw cocoa nibs
Go wild, make some yummy snacks that are also healthy!  I always use organic ingredients.

btw, bird nest ( is made up of about 58% soluable proteins...the highest amoung all food and even synetic protein powders

it greatly increase tissue regeneration

Do you use dried dates or fresh? I cannot find fresh dates anywhere in my town, so I usually use dried dates, but I will soak them overnight if I use them in a smoothie. More date information, please! Thanks!

OK so you realize Birds Nest is basically dried up and then rehydrated Swallow spit?

And that they go into caves full of swallow and bat shit and take these nests down sometimes dumping out baby swallows?

So, technically not vegan and TOTALLY not animal friendly.

Soluble protein or not.

Best proteins are Almonds (raw) Quinoa and Tempeh. Best Fiber are Lentils, Flax and Chickpeas.

FYI: Dates info, taking the dried organic dates you find in many whole food bulk items isle, you can take them soak them 2-3 HOURS Aand massage them slightly to release any trapped stones. Drain off soaking water and use!
