Holy Tabbouleh Batwoman!

We get a couple days of nice weather and my body starts craving my summertime favorites!  I absolutely love tabbouleh, but I dont love eating a lot of wheat....and when you can make something that much more healthy...why not do it!  And before you ask, no you wont get high, and you cant smoke it!

Raw Tabbouleh
Ingredients ( all are estimated, its really up to you and how much you want to eat!!)
1 container of cherry tomatoes
1 large bunch of parsley
splash of olive oil, i prefer raw organic but really whatever you have
1/2 lemon, juiced
raw hemp seeds (can be found at almost all health food stores these days)
Cut the leafy part off of all of your parsley, and set the stems aside.  Throw the leafy parts into a big wooden salad bowl, if you have one, otherwise any mixing bowl will do.  Add the cherry tomatoes, some people slice them in half, I prefer mine whole and it keeps the tabbouleh fresh longer.  Squeeze the heck out of your half of a lemon, mix with hemp seeds, tomatoes and parsley, add a couple turns of sea salt if you would like.  Toss with your olive oil until it is all coated, some people like theirs swimming in oil, I dont, it's really up to you!

Wait wait wait, why did you set aside the stems....well for 1 of 2 reasons, if you have a juicer you can juice them with some carrots, celery, kale, really whatever you want....or you can keep a bag in your freezer full of parsley stems and carrot ends and other veggie leftover parts....so in the winter you can make amazing soup broth..  Parsley is great when you are sick, or just need a pickup, its chock full of Vitamin C...enjoy.  Oh and the sweet vegan bowl was handmade by a friend of mine over at Vegan Dish, nothing like handmade!
